Quang Tri fermented shrimp paste is a gift from the sea, refined from tiny krill (also known as tép moi, tép biển, or khuyếc) inhabiting the coastal waters of Central Vietnam. After being freshly caught, the krill are salted according to traditional ratios, undergoing multiple stages of sun-drying, fine grinding, and long-term natural fermentation. The final product is a paste with an appealing reddish-brown color, a smooth texture, and a rich flavor—a harmonious blend of ocean saltiness, natural seafood sweetness, and a distinctively aromatic aftertaste.
Not as intensely pungent as regular shrimp paste (mắm tôm), Quang Tri mắm ruốc has a milder aroma, a rich yet palatable flavor suitable for many people's tastes.
