Gia Vien fermented shrimp paste originates from Gia Vien district, Ninh Binh – a low-lying wetland area flooded year-round, bordering the Hoang Long, Day, and Boi rivers. This geographical condition creates a rich freshwater ecosystem where tiny shrimp (a species of small freshwater shrimp) thrive abundantly. According to historical documents and local folklore, this fermented paste was born out of the need to store food for purely agricultural residents during difficult economic conditions. The tiny shrimp harvesting season is short (usually from November to December of the lunar calendar, when the water turns murky), so locals devised a way to ferment the shrimp for long-term preservation.
From a simple daily dish, Gia Vien fermented shrimp paste gradually became a famous specialty passed down through generations with heirloom recipes. Currently, Gia Vien district has nearly 20 fermented shrimp paste production facilities, concentrated mainly in communes such as Gia Van, Gia Lap, and Gia Tan. This dish not only serves local demand but is also widely sold across provinces and even appears in Ninh Binh tours as a meaningful gift.
