Ant egg sour soup is a unique specialty of the Quang Binh region, particularly in the mountainous district of Minh Hoa. The main ingredient of this soup is young ant eggs, typically from black or weaver ants nesting on tall forest trees. The ant eggs are cooked with souring greens like young tamarind leaves or wild river-leaf creeper (la giang), along with other vegetables like water spinach and okra, and familiar seasonings such as fish sauce, sugar, and chili. Sometimes, to enhance the flavor, shrimp, fish, or minced meat are added to the soup.
The origin of ant egg sour soup is closely tied to the daily life and culinary culture of ethnic minority groups in the mountainous areas of Quang Binh. Long ago, when life was still tough, local people learned to make use of natural ingredients readily available in the forest, including ant eggs. Ant eggs provided a rich and easily accessible source of protein in nature, especially during the ants' breeding season. Combining ant eggs with sour forest leaves created a rustic, unique dish that suited the local palate perfectly.
