1. What are button snails?

2. Harvesting button snails

Button snails are not prepared by boiling or steaming like other types of snails; instead, they have their own recipe—simple yet rich in flavor. After being harvested from the sea, button snails are sifted to remove sand and soaked in seawater to purge any remaining dirt.
To create an authentic, flavorful dish, the cooking process requires skill. After being thoroughly washed, the snails are quickly stir-fried over high heat with salt, MSG, lime leaves, fresh chilies, and a little cooking oil. The cook must be delicate so that the snails do not shrink or lose their natural sweet taste. The aroma of lime leaves blended with the spicy kick of chili and the slight richness of the snails creates a rustic yet irresistible dish.
