  • Coconut milk: 200ml (pressed from fresh coconut or high-quality canned)
  • Sesame salt: 2 tbsp (golden toasted sesame, finely crushed with a pinch of sea salt)
  • Sugar: 1-2 tbsp (to taste)
  • Filtered water: 1 liter
  • Pandan leaves: 2-3 leaves (optional, to enhance aroma)

Instructions

  • Ingredient preparation
    • Wash sticky rice, soak in water for 4-6 hours (or overnight) to soften. Drain well.
    • Kernel young corn, wash clean, soak in water to soften kernels. Corn cobs can be kept and boiled to extract sweet water for cooking.
    • Wash pandan leaves, tie into small bundles.
  • Cooking stewed corn
    • Add sticky rice and water (or corn cob stock) to a pot, cook over low heat. When rice starts boiling, stir well to prevent sticking to the bottom.
    • Add young corn kernels to the pot, continue cooking on low heat for 20-30 minutes until rice and corn are soft and smooth.
    • Add coconut milk and sugar, stir well, season to taste. If using pandan leaves, drop them into the pot now for aroma. Cook for 5 more minutes then turn off heat.
  • Finish and enjoy
