Bao Ninh fish sauce is not merely a condiment; it is a precious drop of gem, distilled from the depths of the ocean. The main ingredient that makes the reputation of Bao Ninh fish sauce is "ca nuc nu" (baby scad), a small fish only the size of a finger, yet containing the rich, salty flavor of the sea. Like pearls polished by time and waves, baby scads are meticulously selected by Bao Ninh fishermen from boats brimming with fresh fish at dawn.

To create those famous drops of fish sauce, one must choose extremely fresh fish with small bodies and firm flesh, never spoiled. The fish is washed clean, drained, and thoroughly mixed with sea salt—salt that has been aged for a year to settle into a pure, refined saltiness. At a ratio of 3 kg of fish to 1 kg of salt, the fish and salt blend together in rustic wooden barrels, silently fermenting for ten months to a year. Occasionally, the sauce makers diligently stir the mixture, caring for it like a young child, so that each fish gradually matures and breaks down into shimmering, rich, and enticingly fragrant drops of sauce.
