Quang Binh banh beo is neither complicated nor pretentious. It is as simple as the local people themselves, yet packed with an incredible array of flavors. Quang Binh banh beo comes in two forms: plate-served banh beo (banh beo dia) and small-bowl banh beo (banh beo chen). Banh beo dia is poured onto small ceramic plates and flipped over like duckweed floating on a pond. Banh beo chen retains heat longer, serving steaming hot bites continuously. Many choose banh beo dia, partly because it's easier to scoop and partly out of habit, but whichever you choose, the smooth, soft rice cake layer, topped with golden caramelized shrimp flakes, complemented by sweet, sour, spicy, and salty fish sauce, is enough to awaken all your senses.
The ingredients for making banh beo are familiar: fragrant rice flour, fresh shrimp from Nhat Le Beach, a bit of crispy pork cracklings, and rich fish sauce. But what makes the difference is the skillful hands of Quang Binh people. The selected rice must be fresh and fragrant, finely ground, and mixed with water in exact proportions so that the cake achieves a delicate softness while remaining slightly chewy. Fresh sea shrimp are stir-fried until golden and aromatic, evenly sprinkled on top of the cakes like vibrant highlights. The fish sauce is rich and expertly blended with lime juice, fresh chili, and garlic. While each eatery has its own fish sauce recipe, they are all savory, mildly spicy, and deeply appetizing.
