Jumping squid (also known as flashing squid) is one of the famous delicacies of Nhat Le Beach, in former Dong Hoi (now in Quang Tri province). This is a type of fresh squid that fishermen catch directly offshore and bring to land in a very short time, thus maintaining almost its original freshness. The name "jumping squid" stems from the natural characteristics of this species: while alive, the squid often twitches gently, its body still flashes and moves on the plate, clearly showing the freshness just brought from the net to the dining table in a matter of hours.
Compared to regular squid, jumping squid is highly appreciated for its naturally sweet meat, moderately crisp and chewy texture, and almost no fishy odor. Besides its distinctive flavor, this seafood is also rich in protein, taurine, vitamin B12, and many natural minerals from the clean marine environment, offering high nutritional value. In particular, jumping squid is considered a signature specialty of the Central region, most famous in Quang Binh, where there is an abundant source of fresh seafood and near-shore fishing grounds. It is this rare freshness that makes many diners share that "trying it once makes it unforgettable", as the squid is almost still moving gently when served on the table.
