Ham Ninh flower crab (also known as Phu Quoc crab) is manually caught in Ham Ninh fishing village – Ham Ninh commune, Phu Quoc City, Kien Giang province. This is not a distinct crab species, but rather a wild sea crab living at depths of 10-20 meters, hiding under sand or coral. Thanks to the moderate salinity, strong currents, and rich food sources from the coral ecosystem, the crab meat is firm, deeply sweet, non-fishy, thin-shelled, and rich in roe (especially female crabs). The size is moderate (6-7 crabs/kg is best), not overly large and soft like farmed crabs.
There are 3 popular types:
- Three-spot crab (moon crab): smallest size, delicate sweet meat.
- Red crab: colorful red shell, firm meat.
- Blue swimmer crab: sea blue shell, rich and creamy roe.
Best season: early or late lunar month (avoid mid-month as crabs molt and their meat becomes bland). You can eat them year-round, but in season they are noticeably firmer.
