1. Carp farming on the Son River

Son River – a turquoise body of water like a soft silk ribbon stretching across the heritage region, originates from the primeval Truong Son forest and quietly meanders through the majestic limestone ranges of Phong Nha – Ke Bang. This river not only carries rich alluvium but also embraces villages and hamlets along its banks, nurturing generations of local people with the finest gifts of the mountains and forests. One of them is the Son River grass carp – a fish bearing the taste of nature and time.

In the past, when cage fish farming was still unfamiliar, only a few households along the river dropped their first batches of grass carp into the water. They didn't expect much, simply taking advantage of the clean, plankton-rich river to raise fish for their families as part of their life connected to the water. But then, from those small initial fish cages, grass carp farming grew strongly, becoming the main livelihood for many families. Currently, in Phong Nha town, 7 out of 9 residential groups have developed grass carp farming models on the Son River, with fish cages stretching along the gentle stream. Mature grass carp usually reach a weight of about 5kg each, selling to traders at around 100,000 VND/kg.

Grass carp is no longer just a familiar dish on the dinner tables of Phong Nha locals, but has become a specialty, a pride that those who leave remember, and those who visit want to try at least once.

What sets Son River grass carp apart is not only the cool water flowing from the heart of the mountains, but also the natural food sources that locals harvest directly from the fields and gardens surrounding their villages. No commercial feed, no artificial food, the carp grow thanks to algae, wild grass, corn leaves, cassava, and sweet potatoes, as well as the patience of the people and the rhythm of nature. Swimming in the clear water, they grow slowly, developing firm, sweet, and fragrant flesh that retains the pure essence of the Son River. Unlike pond-raised commercial grass carp, Son River grass carp meat is firm with a delicate sweet taste, remaining flavorful and unforgettable no matter how it is prepared.

2. Phong Nha Carp Festival – A unique tourism highlight

Not only a gift from the river, Son River grass carp is also honored by Phong Nha residents through a unique annual festival held around April 30 – May 1. The Phong Nha Grass Carp Festival is not merely a brand promotion event, but also a vivid picture of the lives of the riverfront community, where visitors can not only enjoy the specialty but also have the opportunity to experience the culture and discover the vibrant rhythm of a riverside village along the Son River.

The festival begins in a lively atmosphere as locals and tourists join together in competitions to catch grass carp quickly, find the biggest grass carp, or select the prettiest carp – where the healthiest fish are honored and win the title of "Grass Carp Queen". Record-breaking fish at the festival can weigh up to 13kg, testifying to the superior quality of Son River grass carp as well as the meticulous care of the local people. But perhaps the most attractive part of the festival is the grass carp cooking competition, when red-hot fires glow and the aroma of grilled fish fills the air from boats anchored along the river. Rich braised carp in clay pots, tender and chewy fish cakes, crispy golden fried fish, to steamed carp preserving its natural sweetness, each dish not only showcases culinary creativity but also encapsulates the rustic, genuine soul of the countryside.

However, the meaning of the festival goes beyond honoring a local specialty. Deep within each activity lies a powerful message about environmental protection, nature conservation, and sustainable development. The people of Phong Nha wish to convey that the richness of the Son River today comes not only from nature's gifts, but also from environmental awareness and a lifestyle in harmony with nature. The Phong Nha Grass Carp Festival, therefore, is not only a cultural event but also a reminder of shared responsibility in protecting the ecosystem, reducing overexploitation, and striving toward a future where humans and nature thrive together.

Attending the festival, visitors not only enjoy delicious food, fun activities, and unique customs, but also gain a fresh perspective on the connection between culture, cuisine, and the environment—where Son River grass carp is not just a dish, but a symbol of sustainability, love, and pride of the people of Phong Nha.

3. The culinary pride of Quang Binh

Not a luxurious or elaborate dish, Son River grass carp embodies a pure, natural flavor just like the land that raised it. With firm, sweet, fragrant, non-fishy, and non-mushy meat, the grass carp here has gone far beyond a simple dish to become a pride of Quang Binh, a taste that anyone who tries can never forget.

There is nothing more delightful after a day of exploring the majestic caves of Phong Nha – Ke Bang than sitting on a small boat, drifting along the river, listening to stories of hardworking fishermen, and stopping at a small riverside eatery to savor authentic grass carp. Rich braised carp in a clay pot, charcoal-grilled carp releasing an inviting aroma, and tenderly chewy grass carp cakes – simple, rustic dishes that fully capture the essence of nature, the river, and the diligent hands of Phong Nha's people.

More than just a local specialty, Phong Nha grass carp has reached further as traders purchase and distribute it to various provinces and cities, helping locals increase their income and contributing to building a unique culinary brand for Quang Binh. But perhaps Son River grass carp is still best enjoyed right where it was born – where the clean water enriches every source of life, and where nature and humans blend into a peaceful, gentle rhythm of life.
