Unlike grape wine made in cold climates, Phu Quoc sim wine carries the soul of the vibrant purple flowers growing wild on the hillsides of the Pearl Island.
Phu Quoc boasts vast rose myrtle forests. Around January of the lunar calendar, when the spring weather turns warm, the rose myrtle forests begin to ripen, producing the finest quality berries for winemaking. Locals classify rose myrtle into two main types:
- Hong sim (Pink rose myrtle): Pinkish-purple berries with a sweet and astringent taste, subtle fragrance, and rich in anthocyanosides and sugars. This is the premium ingredient for creating exquisite sim wines.
- Tieu sim (Small rose myrtle): Smaller berries with a dark black color.
