Bombay duck hotpot (also known as porridge fish hotpot) is a signature hotpot dish of the coastal provinces in Central Vietnam, with Quang Binh considered the place that preserves the most authentic and famous flavor. The main ingredient is Bombay duck – a brackish water fish species living along the coastal waters of Central Vietnam. Bombay duck has a slender, long white body without scales and with soft cartilaginous bones. When cooked, the fish meat turns pure white, so tender it almost melts in your mouth, naturally sweet and practically without fine bones (leaving only a very soft backbone). Because of this unique characteristic, local people often call it "porridge fish".
The hotpot dish was honored in the list of Top 100 typical specialty dishes of Vietnam thanks to the harmonious combination of the natural sweetness of fresh fish and the light, sour, and spicy broth. Not elaborate like many high-end seafood dishes, Bombay duck hotpot carries a rustic, intimate yet deep flavor of coastal cuisine.
