To cook Melaleuca mushroom soup with authentic Quang Binh flavor, the secret lies in the mushroom preparation phase to reduce bitterness while keeping its signature flavor, along with fresh ingredients.
Ingredients (for 4 people):
300–400g fresh Melaleuca mushrooms
150–200g fresh shrimp (or add a little minced/sliced pork)
Sweet potato greens – about 1 bunch
A few piper lolot leaves (optional)
Shallots, garlic, seasonings: salt, fish sauce, seasoning powder, pepper
Bone broth or filtered water
Instructions:
Prepare Melaleuca mushrooms (most important): Trim the base and dirty outer layer. Soak mushrooms in diluted salt water for 20–30 minutes to remove dirt and reduce bitterness. Then blanch for 3–5 minutes (or 10–15 minutes if you prefer a milder bitterness), drain and rinse with cold water, then let dry. Slice into bite-sized pieces if desired.
Prepare other ingredients: Peel and devein shrimp. Clean sweet potato greens and cut into sections. Finely chop piper lolot leaves. Season pork (if used) lightly with seasoning powder.
Cook the soup: Sauté fragrant shallots and garlic. Add shrimp and pork, stir-frying quickly until seared. Pour in broth, bring to a boil, and season to taste. Add Melaleuca mushrooms and cook for 5–7 minutes. Finally, add sweet potato greens and piper lolot leaves, cook for another 1–2 minutes, then turn off the heat. Adjust with a splash of fish sauce to release the fragrance.
The finished soup is clear, lightly fragrant with wild mushroom aroma, blending a subtle bitterness with the sweetness of shrimp and greens. It is best enjoyed hot with white rice. Other variations include: cooking with squid, freshwater fish, or making Melaleuca mushroom porridge, stir-frying with sweet potato leaves, or serving with hotpot.
