Hiding among the limestone mountains of Ninh Bình, mountain snails are a land-dwelling species that grow naturally, concentrated in Tam Điệp, Yên Mô, Nho Quan, and Hoa Lư. Unlike aquatic snails, they typically inhabit rock crevices and damp caves, only crawling out when weather conditions are favorable. The snails are about 3–5 cm in size, with thick, hard shells displaying shades ranging from milky white and dark brown to gray.
The diet of mountain snails consists mainly of young grass, moss, and natural leaves growing on the mountains. Therefore, the snail meat is crunchy, chewy, naturally sweet, and carries a very distinct herbal aroma. This flavor profile makes mountain snails a specialty that many diners seek out when visiting Ninh Bình. Living scattered in rock cavities, they are hard to find and heavily dependent on the weather, meaning they are not available year-round. For locals, these tiny snails appearing after rain showers are considered a "blessing from the heavens" bestowed upon the mountains and forests of Ninh Bình.
